Ingredients:
4 scallions, chopped1 large clove garlic, chopped1/8 teaspoon black pepper4 ears corn on the cob, shucked1/4 cup extra virgin olive oil1/4 teaspoon salt-free seasoning

Instructions: |
Boil corn on the cob in plenty of water for 10 minutes. Drain.
Meanwhile, make pesto by blending scallions, extra virgin olive oil, garlic, and seasonings in a blender until smooth.
When corn is drained, use a pastry brush or the back of a spoon and spread pesto over the corn. Serve hot. |
